    Corned beef

    Made my own corned beef this year. No store bought stuff. I'll find out tonight if it's any good. It takes about 2 weeks in the brine to make.

    I made a big pot of corned beef and cabbage tonight So I should be able to feed quite a few. Wendell, you should work up a pretty good appetite swimming across the creek.

    You're right about that Steve...last time I swam across the Mississippi I jumped in just south of St Louis and made it across by St Gen. That is one fast running creek !!!! (You know I would never LIE about that). Yeah right.

    By the way, if you wanna make a double batch you could use my Great grandmothers brine tank made out of a sycamore log....its 9 feet long and roughly 30" across hewed out to about 22" depth. It was hand made (obviously) somewhere in the 1870s or thereabouts and now resides comfortably in my garage. Its what they used to salt cure their meats but it would work well for your mega-batch of corned beef.... because THAT's what you'll need if I swim the Mississippi !!!!!

    Hey Wendell just float across the Mississippi on the log. Add a rudder and a sail for a quicker and more navigable journey!

    Wendell they say that sugar melts and something else floats. So I'm sure that you floated.
    As far as the Corned beef, you're a day late and a dollar short. I cured a 5 pound brisket and there is nothing let except for the fat. You're welcome to that. The recipe that I used calls for putting the brisket in the brine in a zip lock bag and refrigerate for 2-3 weeks. Don't think that your Great Grandmother's sycamore log would fit into my refrigerator.
